  • 1½ tbsp warm water
  • 2 tsp vanilla extract
  • 2 tbsp (30 g) unflavored vegetable oil (e.g., canola oil)

Step-by-Step Guide to Making Sponge Cake

1. Preheat and Prepare

  • Preheat your oven to 160°C (320°F) with the fan on.
  • Line the bottom of two 8×3 inch baking tins with baking paper. Do not grease the sides of the tins; leaving them bare prevents the cakes from shrinking after baking.

2. Mix Dry Ingredients

  • In a bowl, combine the flour, cornstarch, baking powder, and salt. Mix until well combined. Set aside.

3. Whip Egg Whites

  • In a medium-sized bowl, add the egg whites and white vinegar. Using a hand or stand mixer, whip on medium-high speed for 30 seconds until foamy.
  • Gradually add ⅓ cup of sugar while continuing to mix for 2 minutes. Reduce the mixer speed to low and mix for an additional minute, achieving stiff peaks.

4. Whip Egg Yolks

  • In a large bowl, combine the remaining ⅓ cup of sugar and warm water. Add the egg yolks and vanilla extract. Whip on medium-high speed for 4 minutes, then reduce to low and mix for another minute until the mixture is thick and ribbons form when lifted with a spoon.
  • Stream in the vegetable oil while mixing on medium speed until well combined.

5. Combine Mixtures

  • Gently fold half of the whipped egg whites into the egg yolk mixture using a spatula until just combined.
  • Sift in the dry ingredients and gently fold through until just combined.
  • Finish by adding the remaining egg whites and fold gently to maintain as much air as possible without overmixing.

6. Bake the Cake

  • Distribute the batter evenly between the prepared baking tins. Tap the tins lightly on the counter to release any large air bubbles.
  • Run a thin knife or toothpick through the batter to remove any remaining air bubbles.
  • Bake for 25 minutes. To test doneness, gently touch the tops; they should create a small indent that slowly bounces back.

  • Once baked, tap the tins on the counter from a height of about 10cm and lay them upside down (while still in the tins) on a wire rack to cool completely. This prevents the cakes from deflating.
  • After cooling for about an hour, run a thin knife around the edges to release the cakes from the tins, then turn them out onto a wire rack.
